Get your coffee brewing as you are going to want a fresh cup when your muffins are hot from the oven.
Things you’ll need:
2 or 3 ripe bananas
1 c sugar
1 tsp vanilla
1 egg (chicken or duck, either will do fine)
2 c flour
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 c milk (fresh or just turning is ok)
Note: while you have the milk out, if you are planting okra in the garden a quick sprout tip is to soak
your seeds in milk overnight.
1/2 c vegetable oil
Preheat the oven at 350 degrees. Prepare your pan with grease or non stick spray.
In large bowl mash bananas. Add sugar, egg, vanilla. Don’t mix yet.
Measure your flour, adding baking powder, baking soda, salt. Mix dry ingredients with fork.
Combine flour mix with banana mix. Add milk and oil. Stir the mix only til moist. Spoon into prepared muffin cups and bake about 20 minutes. There you have it. Golden brown and delicious. Enjoy with your fresh coffee.
